Chickpea Patties; For Sher

Hard to believe it was last Sunday that Sher left us....
Hard to believe it's already been a week....
Hard to believe it's only been seven days.....
When the Bread Baking Babes decided to make and post one of Sher's recipes today, instead of the more mundane Bread, I immediately went to What Did You Eat to chose a recipe.
As is my usual wont, when faced with words and recipes, I got lost. After spending an hour or so, clicking, meandering, reading, remembering, I still hadn't found a recipe I thought would be 'right'.
So, as is my other habit, I shelved the task for awhile and tackled the mountainous mess that passes for my desk, instead.
About halfway through the pile of scraps of paper and post-it notes of 'vitally important information that must be kept' I found a scribbled recipe for Chickpea Patties.
Hmmmm.....
Didn't I get this from Sher?
Rather than looking for something elaborate and 'formidable' to make from Sher's blog, why not just make the one I had been planning on making anyway?
The one that, when I saw the photo, I said to myself "Self, you must make these.... Soon"
So I did.
Of course, I modified it slightly.
Sher would understand. She'd already posted 2 different versions herself, and there was nothing to hint that there wouldn't be a third iteration in the future.
Sher understood that recipes are constantly changing, evolving to reflect our current moods.
And, perhaps, more importantly, our current pantries.
She made hers from hers...
I made mine from mine.
And they were good!
Chickpea Patties
15oz (450gr) chickpeas, drained, rinsed, and chopped
1 carrot, finely chopped about 1/3 cup
1 stalk (rib) celery, finely chopped, about 1/3 cup
1/2 onion, finely chopped, about 1/3 cup
2 cloves garlic, minced
2 tbs basil, chopped
2 tbs oregano, chopped
1 egg
1 - 2 tbs olive oil
Sauté onion, carrot, celery and garlic in oil until tender. Remove and put into a bowl, along with chickpeas and herbs. Stir to combine and cool vegetables. Lightly whisk egg and add to vegetables. Heat a bit of oil in large nonstick skillet. Drop mixture, about 1/2 cup at a time, into skillet and form patties with 2 spoons. (It's rather a loose mix - and you don't want them too big or you won't be able to turn them) Fry them about 4 minutes, then turn and fry 4 minutes longer.
I made them in 2 batches of 4 patties each.
I ate half of them immediately, with a tomato olive sauce on the side.
I ate the other half, the next day.... Standing in the fridge.... Whenever I walked passed....
Yup, they were good cold, too.

This is a nice tribute to Sher. I've never had chickpea patties but they look delicious!

Chickpeas were one of the things that always made me think of Sher. I think she would have loved knowing that so many people are writing tributes to her.

Hi KZ, thank you for picking chickpea patties, they do look delicious! I am going to miss Sher too. She had such a nice way about her blog, kind of like a chat with an old friend. My cat is going to miss Sher and Laura kitty too. Kitikata.blogspot.com is my cat's blog and my cat picked Sher's sardine recipe.

Katie--I totally agree. Sher knew the real essence of how recipes change and evolve to service us how me need them. It's part of the joy of cooking. Thank you for sharing your memorial of her with us.
