Beauty.
(What is it about asparagus and rice? I think I'm having it for dinner tonight. Again.)
:D

I hope to have the patience to start making risotto again. It's a nice replacement for winter soup, which my family is getting sick of!

CC - You could vary it and have rice and asparagus - that's what I do...
Betty - I've been making risotto so long and so often I may have 'dumbed it down' but, for me it's easier than soup, quicker than a stir-fry and uses up all sorts of little bits of leftovers.

it's so nice to see Spring-type meals on the menu again! We're eating outside tomorrow, sunshine, wonderful sunshine again!

I love love love asparagus risotto! We are still just a few weeks away from local asparagus here in the northeast US. I can't wait!

I am sooooo glad to see sunshine....and asparagus. The season is so short we eat it every way and every chance we get!
